Chapel Sider Franko is a sophisticated Specialty Cider that showcases the remarkable depth of 100% Dabinett apples. This single-varietal expression presents a mature sensory profile shaped by aging in ex-red wine barrels, resulting in a well-rounded and complex character. The Dabinett apples contribute a robust bittersweet core with earthy, spicy undertones and firm, structural tannins. The red wine barrel influence introduces vinous complexity, suggesting notes of dark berries and seasoned oak that integrate seamlessly with the concentrated apple character. Appearance. Deep amber to burnished gold with subtle copper highlights (SRM 10-12). Brilliant clarity with minimal, quickly dissipating effervescence and no head retention.
Aroma. High intensity. Concentrated baked apple and spicy apple skin aromas lead, followed by earthy phenols. Secondary notes of seasoned oak, dried dark fruits, and a distinct vinous red wine character emerge as it warms.
Taste. Initial rich bittersweet apple flavor transitions into a complex mid-palate of oak-derived wood and grape skin. Low acidity is balanced by firm Dabinett tannins. The finish is long and dry, with a mature, lingering aftertaste of cooked fruit and pleasant wood-derived astringency.
Mouthfeel. Medium-full body with a noticeably viscous and smooth texture. Carbonation is low to still. Significant mouth-coating astringency from fruit and wood tannins; noticeable but well-integrated alcohol warmth.

Description This cider is 100% Dabinett (from 2019) fermented and aged in an ex-red wine barrel. The result is well-rounded, mature and complex. A little like our grandfather Francis Cook, affectionately known as Franko. 7.8% abv & 750ml.

How to serve: very lightly chilled

On the nose: citrus orange flesh, vanilla and five spice, along with sandalwood, leather and wooden press racks.

The taste: juicy and dry, ripe red apples and orange squash. This is typical Dabinett with all it’s orange flesh, vanilla and spice coupled with the influence of the red wine barrel which has elevated all the elements as well as added some extra red fruit bitter tannins. A little flourish of acidity is quickly expelled by a long dry finish with a chalky texture. 750ml. 7.8%.
