Chapeau Exotic is from the De Troch Brewery. It pours with a deep copper colour and lots of carbonation that produces a huge head. De Troch Exotic has a very fruity, musty, sourish aroma. It tastes of mixed fruit; pineapple being the most obvious one, tart and sour, then smooths out and finishes with a pineapple-orange juice flavour.

Curiosidades: elaboración de cervezas LAMBIC. Esta variedad, exclusiva de Bélgica, es elaborada con métodos tradicionales, que dependen de la fermentación espontánea y maduración posterior, en barrica y en botella. En una primera etapa se prepara una mezcla de malta, trigo y agua. Durante el proceso, el almidón se transforma en azúcares, que son adecuados para la fermentación. La mezcla se repite varias veces, se filtra la mezcla, y con es éste el mosto que se convierte en cerveza. Madurado el lúpulo se añade al mosto, se hierve a continuación durante 4 o 5 horas para que alcance una densidad adecuada y después de hervir los restos de lúpulo son eliminados. El mosto se traslada a los depósitos para enfriamiento, permitiéndose que el aire exterior pase libremente a esas grandes cubas, abiertas, lo que tiene lugar precisamente entre los meses de Octubre a Abril, razón por la cuál la cerveza LAMBIC es considerada una cerveza de temporada. Habrás apreciado que no hemos citado las levaduras, que no se añaden, sino que se deja actuar a ambiente. El mosto, ya frío, se traslada a barricas de roble para la fermentación, que se hace patente cuando a los pocos días la espuma va apareciendo por los agujeros del tapón. Así se obtiene la fermentación espontánea, y mediante la mezcla con otros mostos jóvenes se obtiene una segunda fermentación espontánea en la botella. Obtenida así la cerveza (GEUZE) para las demás variedades se añaden zumos de plátano, piña, frambuesa o limón para obtener la variedad elegida. Para la aromatización de estas cervezas se utilizan frutas, no lúpulo, salvo el añadido inicialmente, que normalmente es un lúpulo viejo, que ya ha perdido su aroma y sabor, pero que conserva las propiedades antisépticas naturales.
