CESC Marion
Inspired by medieval traditions, Marion is a unique, still Old Ale that prioritizes a lush, uncarbonated mouthfeel. A complex grist of Vienna, Caramunich, and Carafa malts produces a hazy, deep reddish hue and a rich bouquet of roasted grains and toffee. On the palate, it delivers a dense, unctuous sweetness defined by layers of caramel and toasted bread. Despite the inclusion of Saphir hops, the bitterness remains imperceptible, allowing the malt's "spirit of barley" to dominate. This unfiltered, non-carbonated experience offers a smooth, refreshing finish that bridges the gap between historical ale and modern craft complexity.
Appearance. Deep reddish-brown to copper (18-22 SRM); turbid and hazy appearance with no foam or head retention due to the absence of secondary fermentation.
Aroma. Moderate to high intensity featuring prominent roasted malt character, toffee, and caramel; subtle fruity esters like dried plum are present, with almost no perceptible hop aroma.
Taste. Initial impression is malty and sweet, leading into rich layers of toasted bread, caramel, and light roasted grains; hop bitterness is very low to imperceptible. The finish is surprisingly refreshing despite the heavy malt presence, with a lingering sweetness of dark sugar.
Mouthfeel. Medium-full to full, chewy, and highly unctuous body; very low to no carbonation (still beer) creates a smooth, velvety texture with a subtle alcohol warmth.
