This vibrant Wild Specialty Beer presents a striking evolution of hop-forward character met with assertive acidity. The sensory profile is dominated by a complex bouquet of Citra, Mosaic, and Simcoe hops, delivering a punchy fusion of tropical mango, ripe passion fruit, and bright citrus zest against a background of resinous pine. A clean, sharp lactic sourness cuts through the palate, enhancing the perception of fresh fruit while stripping away residual sugars for a bone-dry finish. The interaction between the wild fermentation and the aromatic American hops creates a refreshing, multi-layered experience where funky depth meets modern lupulin intensity.
Appearance. Pale straw to deep gold (4–7 SRM). White, frothy head with moderate to low retention typical of acid-forward beers; slight haze is present due to generous dry-hopping.
Aroma. High intensity. Sharp lactic tartness blends with a heavy dry-hop presence of tropical fruit, grapefruit, and berry. Distinctive Citra and Mosaic citrus notes are supported by a faint, earthy pine aroma from the Simcoe. Malt is neutral and crackery.
Taste. Aggressive initial lactic acidity leads to a mid-palate rich in tropical and stone fruit flavors. Hop bitterness is low, allowing the acidity to provide the structural bite. The finish is extremely dry and clean, with lingering notes of lemon zest and resinous hop oils.
Mouthfeel. Medium-light body with a crisp, refreshing texture. Carbonation is moderate-high, providing a lively effervescence that accentuates the tartness. Minimal alcohol warmth is perceived.
