This 8th-anniversary Wild Specialty Beer transforms a traditional Belgian-style Witbier base through a year of maturation in red wine barrels. The addition of blackberry and hibiscus flower creates a vibrant, vinous profile defined by tart red berries and floral sophistication. The sensory experience is dominated by a lively interplay between soft wheat grains and a sharp, wild lactic acidity. Red wine barrel aging imparts structured tannins and subtle oak notes, while the hibiscus lends a cranberry-like tartness and floral depth. Highly effervescent, it beautifully balances funky fermentation characters with deep fruit saturation and a bone-dry finish.
Appearance. Hazy, deep magenta to ruby-red hue with a thin, pinkish-white head that shows moderate to low retention; light lacing on the glass.
Aroma. High intensity; sharp lactic tartness and vinous red wine notes lead, followed by prominent jammy blackberry and floral hibiscus. Low grainy wheat malt character provides a subtle backdrop, accompanied by earthy funk and light oak tannin.
Taste. Initial impression is a sharp, clean acidity paired with intense blackberry fruitiness. The hibiscus adds a herbal, floral tartness that complements the vinous red wine barrel character. Grainy wheat malt is subtle. Hop bitterness is negligible, as acidity provides the primary balance. The finish is very dry and lingering, with a mild tannic pucker from the wood and fruit skins.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A light, integrated alcohol warmth is present. Moderate tannic astringency from the hibiscus and oak provides a structured, drying sensation.
