This Hazy IPA provides a vibrant, tropical sensory experience driven by a focused Single Hop showcase of Mosaic. The aroma is highly intense, bursting with notes of ripe mango, passion fruit, and a distinct berry-like sweetness, supported by a clean, bready malt backbone. Utilizing a proprietary blend of two house yeasts, the fermentation character enhances the hop-driven fruitiness while maintaining a clean profile. On the palate, the character is exceptionally juicy with a soft, rounded mouthfeel and low bitterness that ensures high drinkability. The finish is smooth and off-dry, emphasizing the vibrant, tropical nature of its hop and yeast interaction.
Appearance. Pours a hazy, pale straw to light gold (4-5 SRM) with a luminous, opaque quality. It is topped by a thick, meringue-like white head with high retention and substantial lacing.
Aroma. High intensity aromatics defined by the Mosaic hop variety, featuring pungent tropical fruit, stone fruit, and citrus zest. A neutral, grainy malt presence sits in the background, complemented by light fruity esters from the dual-yeast fermentation.
Taste. High fruity hop flavor mirroring the aroma with notes of mango and grapefruit. Malt flavor is low and bready. Perceived bitterness is low, providing a soft balance that allows for a juicy, lingering fruity aftertaste without any harshness or sharp edges.
Mouthfeel. Medium-full body with a remarkably smooth, soft texture and no astringency. Carbonation is moderate, and there is a very light, well-integrated alcohol warmth.
