This Mexican Gose presents a vibrant tropical evolution of the historic style, balancing sharp refreshment with lush fruit. A bright, tangy lactic acidity immediately awakens the palate, carrying authentic, sun-ripened flavors of Mango and juicy Pineapple that lean into the "Paraíso" theme. Beneath the fruit, a soft, doughy wheat malt backbone provides structure, while a delicate inclusion of sea salt enhances the tropical sweetness and provides a mouthwatering finish. The traditional coriander remains subtle, offering a citrusy lift that complements the tartness. It is an effervescent, crisp, and remarkably refreshing interpretation that balances fruit-forward intensity with a clean, dry, and slightly saline conclusion.
Appearance. 3–4 SRM. Hazy, pale gold with a warm yellow hue from the fruit additions. Topped by a moderate, fine-beaded white head with good retention and light lacing.
Aroma. High intensity of tropical fruit, featuring fresh Mango and sharp, acidic Pineapple. Background notes of bready, doughy wheat malt provide a soft base. A light, clean lactic tartness is present, accompanied by a subtle, bright citrus and floral coriander character. No hop aroma.
Taste. Initial burst of tart lactic acidity followed by succulent Mango and zesty Pineapple. A moderate bready malt sweetness balances the sourness. Very low bitterness and no hop flavor. A distinct but restrained saltiness emerges mid-palate, lending a mouthwatering quality. The finish is dry and crisp, with lingering tropical fruit notes and a clean, refreshing acidity.
Mouthfeel. Medium-light body with a refreshing, tingly mouthfeel enhanced by high carbonation and mineral salt. No alcohol warmth. Crisp and effervescent without being thin or heavy.
