Cerveza Bruer Aoki
This American IPA, crafted as a modern Cold IPA, showcases a lean and crisp profile through the use of rice in the grist and a clean lager yeast fermentation. The sensory experience is dominated by a vibrant hop duo of Bru-1 and Mosaic, yielding intense aromas of fresh pineapple, blueberry, and tropical stone fruit. Its brilliant clarity and high carbonation enhance a sharp, assertive bitterness that remains smooth across the palate. The absence of heavy malt sweetness or esters allows the nuanced notes of pine and citrus to shine, culminating in a bone-dry, refreshing finish that exemplifies a clean, hop-forward character.
Appearance. Pale to medium gold (6-7 SRM). Brilliant clarity. Persistent, frothy white head with excellent lacing.
Aroma. High intensity hop aroma featuring pineapple and yellow fruit from Bru-1, layered with blueberry and subtle resinous pine from Mosaic. Very low, neutral, grainy malt presence with no esters or fermentation byproducts.
Taste. Initial hop-forward impression of tropical fruit and citrus zest. Low, cracker-like malt flavor provides minimal support for a firm, high bitterness. Extremely clean fermentation character with no sweetness. Finishes very dry and crisp with a lingering, clean hop bitterness.
Mouthfeel. Medium-light body with a crisp, lean texture. High carbonation. Smooth mouthfeel with no astringency and very light, well-integrated alcohol warmth.
