This complex Wild Ale pays homage to the ancestral Chimbango, blending sun-dried figs and earthy mais jora into a singular sensory experience. Eighteen months of aging in Tokaji barrels imparts luxurious notes of honey, apricot, and noble rot, which intertwine with a funky, mixed-fermentation profile. The sun-dried figs provide a deep, jammy richness that contrasts beautifully against a bright, lactic acidity. Expect a sophisticated interplay between the rustic grain character of the jora corn and the elegant, vinous depth of the Hungarian wine casks, finishing dry with a lingering spicy complexity and refined wild character.

Appearance. SRM 12–16; deep amber to burnished copper. Moderate off-white head with fair retention. Slight to moderate haze characteristic of wild yeast and corn adjuncts.

Aroma. High intensity with complex layers of sun-dried figs, honey, and floral Tokaji wine. Distinctive funk featuring leather, damp earth, and sharp lactic tartness. A rustic, grainy sweetness from the mais jora is present, accompanied by subtle notes of clove and cinnamon spices.

Taste. Initial impression is sharply tart and vinous. Rich flavors of sun-dried figs and stone fruit dominate the mid-palate, supported by honeyed oak and sweet wine characteristics from the Tokaji barrels. Mais jora provides a cereal-forward, earthy malt backbone. Hop bitterness is very low, as the balance is driven by acidity. Finishes bone-dry with lingering notes of dried fruit and a peppery spice complexity.

Mouthfeel. Medium-full body with a smooth, wine-like texture. Moderate carbonation. Noticeable alcohol warmth that remains well-integrated and pleasant. Low astringency with a puckering, clean finish.
