At 10% ABV, this collaboration with Domus delivers a sophisticated sensory experience where deep notes of raisins, dried plums, and figs emerge from a rich, bready-toasty base. The presence of dark Belgian candi sugar provides a caramel-like depth without excessive cloying sweetness, while spicy phenols and a soft, rose-like alcohol warmth provide a complex, uplifting lift. This high-gravity ale balances its robust malt profile with a surprisingly smooth, moderately dry finish, ensuring a harmonious profile despite its potent strength.
Appearance. Deep coppery-brown (approx 20 SRM) with brilliant clarity. Features a huge, dense, moussy, and persistent light tan head that leaves significant lacing.
Aroma. High intensity with a complex mix of rich, toasty malt and deep dark fruit esters including prunes and dates. Low spicy phenols suggestive of black pepper and vanilla. A soft, perfumy alcohol presence is noticeable but well-integrated, with negligible herbal hop character.
Taste. Initial impression is malty-rich with flavors of caramel and toasted bread. Strong ester profile of dark orchard fruits and raisins. Medium-low bitterness (approx 30 IBU) provides a clean balance against the malt richness. Complex and harmonious finish that leans moderately dry with a lingering note of dark sugar and warming alcohol.
Mouthfeel. Medium-full body with a creamy, luxurious texture. High carbonation that remains smooth rather than sharp. A prominent but refined alcohol warmth is present without being hot or solvent-like.
