This Double IPA presents a vivid sensory tribute to the harvest, led by a potent trio of hops. Organic Chinook delivers a robust resinous and spicy foundation, while Centennial and Citra contribute bright layers of grapefruit, floral notes, and tropical fruit. Despite its gluten-free construction and 7.5% ABV, the profile remains decidedly West Coast: lean, clear, and intensely bitter. The double dry-hopping amplifies the aromatics of pine and citrus over a restrained, neutral malt backbone. It finishes crisp and dry, emphasizing a clean hop character that lingers long after the first sip, balancing power with exceptional drinkability.

Appearance. Deep gold to light amber (SRM 7-9). Brilliant clarity with a tall, dense, off-white head that exhibits excellent retention and leaves significant lacing on the glass.

Aroma. Intense hop aroma featuring prominent notes of resinous pine and spicy earth from Chinook, blended with floral citrus and grapefruit from Centennial. Citra adds a secondary layer of tropical mango and lime. Malt is low and neutral, providing a grainy backdrop. Fermentation is clean with very low fruity esters.

Taste. The initial impression is a massive wave of hop flavor mirroring the aroma—pine, citrus zest, and tropical fruit. Bitterness is high and firm but remains smooth, avoiding harshness. Malt support is minimal and bready, allowing the hops to dominate. The finish is very dry with a long-lasting, clean bitterness and a hint of citrus peel in the aftertaste.

Mouthfeel. Medium body with a smooth, slightly oily texture from the heavy hopping. Carbonation is moderate-high, providing a crisp bite. A light, pleasant alcohol warmth is present but well-integrated, with no hop-derived astringency.
