The Devil is an intense Double IPA that captures a commanding essence through a complex hop triumvirate of Centennial, Cryo Mosaic, and Nelson Sauvin. This expression delivers a powerful sensory experience where the classic citrus and floral notes of Centennial meet the concentrated tropical punch and blueberry accents of Cryo Mosaic. Distinctive layers of white wine grapes and crushed gooseberry from Nelson Sauvin weave through the profile, adding a sophisticated, vinous edge. Despite its potent 8% ABV, the beer maintains a deceptive smoothness, balancing a clean, soft malt backbone with an aggressive yet refined hop presence that embodies a character as formidable as its namesake.
Appearance. Deep gold to light orange-copper (7–9 SRM) with a significant, opaque haze. It is topped by a moderate, creamy, off-white head that demonstrates excellent persistence and leaves dense lacing.
Aroma. High intensity hop-forward aroma featuring prominent grapefruit and lemon from Centennial, followed by a heavy layer of tropical mango and ripe blueberry from the Cryo Mosaic. Nelson Sauvin provides a distinctive top note of white wine grapes. A neutral, grainy malt sweetness resides in the background with a clean fermentation profile and a subtle, well-integrated alcohol warmth.
Taste. Initial impression is an explosion of citrus zest and tropical fruit. Centennial delivers bright lemon peel, while Cryo Mosaic contributes saturated notes of guava and resinous pine. Nelson Sauvin adds a complex layer of Sauvignon Blanc-like grape character. Bitterness is firm and high but lacks harshness, balanced by a light, soft bready malt. The finish is medium-dry with a lingering, resinous hop aftertaste.
Mouthfeel. Medium-full body with a remarkably smooth, creamy texture. Carbonation is moderate, providing a gentle prickle that lifts the heavy hop oils. A controlled, warming sensation from the 8% alcohol is present but smooth, without any harsh astringency.
