This American Sour Gose presents a vibrant, tropical interpretation of the historic style, dominated by a lush profile of ripe mango. The aroma leads with intense stone fruit and a bright lactic tartness, underpinned by a subtle, citrusy coriander spice. On the palate, a bold acidity provides a refreshing snap that perfectly balances the doughy Pilsner and wheat malt base. The addition of mango adds a succulent depth, while a restrained salinity provides a savory, mouthwatering quality to the finish. Despite its elevated strength, the beer remains highly effervescent and crisp, concluding with a clean, fruit-forward dryness.
Appearance. Gold to light orange (5–7 SRM) with a moderate to heavy haze from wheat proteins and mango addition. Features a moderate, white, effervescent head with fair retention.
Aroma. High intensity. Pronounced fresh mango aromatics are front and center, supported by a clean, lactic sourness reminiscent of lemon zest. Light doughy wheat malt and a subtle, floral, citrusy coriander spice are present. No hop aroma.
Taste. Initial impression is a sharp, refreshing lactic acidity balanced by sweet-leaning mango fruitiness. Very low bitterness. Malt flavor is moderately bready and doughy. A light, mineral salt character emerges mid-palate, enhancing the fruit flavors and leading to a very dry, fully-attenuated, and acidic finish.
Mouthfeel. Medium body, slightly fuller than traditional examples due to the higher alcohol and fruit solids. High carbonation with a tingly, mouthwatering sensation from the salt. Low alcohol warmth.
