Cervejaria Dogma

Stolf is a vibrant Hazy IPA that captures a complex bouquet of modern hop character. The aroma is dominated by the distinct white wine and gooseberry notes of Nelson, complemented by the layering of passion fruit and subtle strawberry from Strata. Vista hops further refine the profile with soft impressions of ripe melon and pear. Visually, it presents a signature opaque, golden glow with a dense, persistent head. On the palate, the experience is remarkably soft and juicy, featuring low perceived bitterness and a supple, grainy malt backbone that allows the intense tropical and stone fruit flavors to lead into a clean, pillowy finish.

Appearance. 4 SRM. Deep gold with a heavy, opaque haze and a luminous shine. Thick, meringue-like white head with excellent retention and substantial lacing.

Aroma. High intensity. Punchy tropical fruit including passion fruit and mango alongside stone fruit notes of peach. Distinct Nelson character provides crushed gooseberry and white grape. Strata adds a hint of dankness and berry, while Vista provides sweet melon and pear. Low bready, grainy malt in the background with a neutral fermentation profile.

Taste. High fruit-forward hop flavors mirroring the aroma: passion fruit, white wine, and melon. Low bitterness that is soft and well-integrated, never sharp. Low grainy malt flavor provides a neutral base. Off-dry finish with a lingering tropical juice aftertaste and no harsh hop burn.

Mouthfeel. Medium-full body with a soft, pillowy, and smooth texture. Moderate carbonation. Absence of any astringency or grain harshness. Very light, well-integrated alcohol warmth.
