This American Stout subverts expectations with a brilliant golden hue, designed as a White Stout to challenge visual stigmas. The sensory experience is dominated by an intense infusion of bright, floral Ethiopian coffee beans and the deep, earthy richness of Criollo cacao nibs. Fragrant Papantla vanilla provides a luscious, creamy aromatic bridge between the roasted additions and a pale malt base. While it lacks the dark grain astringency of a traditional dark beer, it maintains the style's assertive bitterness and medium-full body. Subtle citrusy hops provide a clean counterpoint to the decadent, lingering finish of chocolate and vanilla spice.
Appearance. 5–8 SRM (Golden to deep amber). Large, persistent off-white head with excellent lacing; clear to slight haze depending on the adjunct load.
Aroma. High intensity; prominent bouquet of freshly roasted Ethiopian coffee with floral and citrus nuances. Secondary layers of rich Criollo cacao and sweet, aromatic Papantla vanilla. Very low resinous hop aroma and clean fermentation profile.
Taste. Initial impression of creamy vanilla followed by a wave of bright coffee and bittersweet chocolate. Moderate hop bitterness provides balance against the perceived sweetness of the vanilla. Malt character is bready rather than burnt, yet the coffee and cacao deliver the classic roasted flavors of the style. Finishes medium-dry with a lingering mocha aftertaste.
Mouthfeel. Medium-full body with a silky, creamy texture. Moderate to high carbonation enhances the aromatic lift. Smooth delivery with no alcohol heat or roasted grain astringency.
