Sindicato Cervecero, a collaboration between Cervecería de Colima and Cervecería Hércules, presents an elegant Italian-style take on the classic German Pils. This expression elevates the traditional profile through a pronounced dry-hop addition, resulting in a vivid sensory experience. The aroma is intensely focused on floral and fresh herbal notes, characteristic of noble hop varieties used in this style. On the palate, a lean backbone of toasted cracker and doughy Pilsner malt provides support for a firm, clean bitterness. The finish is exceptionally dry and crisp, showcasing a meticulous fermentation that allows the delicate interplay of herbal spice and mineral notes to shine with refreshing clarity.
Appearance. Straw to deep yellow (SRM 3). Brilliant clarity with a creamy, long-lasting white head that leaves delicate lacing on the glass.
Aroma. Moderately high intensity featuring prominent flowery and herbal hop character. Underlying low grainy-sweet and toasted cracker malt notes. Clean fermentation profile with no yeast-derived esters.
Taste. Initial light grainy malt flavor is quickly overcome by a firm hop bitterness and herbal hop flavors. Finishes very dry and crisp with a lingering, clean bitterness. The balance is decidedly hop-forward, supported by a neutral, bready malt backbone.
Mouthfeel. Medium-light body with moderately high carbonation. Provides a crisp, refreshing snap on the tongue with no alcohol warmth or astringency.
