Moraleja reimagines the classic Gose by layering dark, roasted nuances over a bright, lactic tartness. This black-hued ale bursts with the vibrant, jammy aromas of blackberry and cherry, beautifully complemented by the subtle, citrusy spice of coriander. The palate is defined by a refreshing acidity that heightens the berry character, while a delicate touch of sea salt provides a mouthwatering roundness. Despite its dark appearance derived from specialty grains alongside Pilsner and wheat malts, it remains light on the tongue, finishing bone-dry with a lingering pucker and a faint, toasty malt presence that grounds the exuberant fruit profile.
Appearance. Opaque, deep black to midnight purple with a garnet edge. Features a moderate, pink-tinted tan head with fair retention and light lacing; effervescent despite the dark color.
Aroma. Moderate to high intensity. Pronounced lactic sourness and bright blackberry and cherry fruit. A light, spicy coriander note offers citrus-like depth. Very low toasty malt character with a subtle, clean saline breeze.
Taste. Initial impression is sharply tart and fruity. Blackberry and cherry provide a tangy sweetness that is quickly cut by medium-high lactic acidity. Moderate bready wheat flavor with a hint of dark chocolate or toast. Salt is noticeable but restrained, enhancing the fruit. Bitterness is very low with no hop flavor. Finishes dry and crisp with lingering berry skin and acidity.
Mouthfeel. Medium-light body with high, prickly carbonation. The salt provides a distinctively tingly, mouthwatering sensation on the sides of the tongue. No alcohol warmth; refreshing and crisp with no astringency from the dark malts.
