This vibrant Berry Mead presents a refreshing fusion of delicate honey and tart, sun-ripened raspberry. The sensory experience is led by a bright fruit acidity that elegantly balances the honey’s floral sweetness. With a moderate 7% ABV, it offers a crisp, clean profile that emphasizes the natural fruit character without the heaviness of higher-gravity traditional examples. The raspberry provides a sharp, slightly tannic edge that keeps the palate lively, while the honey provides a smooth, fragrant foundation. This results in a balanced, semi-dry finish that showcases a harmonious relationship between the fermented sugars and the punchy berry additions.

Appearance. Brilliantly clear with a vibrant, deep pink to ruby red hue. Still to very low carbonation with no head or lacing, typical for a melomel of this strength.

Aroma. High intensity of fresh raspberry, displaying both tart and sweet berry notes. Moderate floral honey aroma provides a soft, sweet backdrop. Clean fermentation profile with no detectable phenols, esters, or harsh fusel alcohols.

Taste. Initial impression of tart raspberry juice followed quickly by light floral honey sweetness. The fruit flavor is natural, fresh, and dominant. Bitterness is absent, but the natural acidity from the raspberries provides a firm structural balance. The finish is semi-dry with a lingering essence of berry skins and light honey.

Mouthfeel. Medium-light body with a smooth, slightly mouth-watering acidity. Carbonation is low. Very light, well-integrated alcohol warmth provides a subtle lift to the finish without being hot.
