Cerex Boletus presents a unique interpretation of the German Pils, integrating seasonal Boletus mushrooms for a distinctive earthy character. The sensory experience begins with an aromatic profile of fresh grass and forest floor, underscored by a light caramel sweetness. Visually, the beer displays a yellowish-amber hue with a characteristically turbid appearance from its double fermentation. On the palate, toasted malt flavors of biscuit and cracker merge with the savory, umami notes of the mushrooms. Despite the atypical ripe fruit esters, it maintains a crisp, lager-clean finish with a lingering bitterness that honors its traditional European roots while exploring the wild terroir of the dehesa.

Appearance. Yellowish-amber (8-11 SRM). Turbid and hazy appearance due to double fermentation and mushroom particulates. Topped with a creamy, long-lasting white head with good lacing.

Aroma. Moderately-high herbal and earthy intensity. Significant notes of fresh grass and forest floor (sotobosque) derived from the Boletus infusion. Low to medium grainy, toasted malt character with a hint of honey and a light caramel finish. Clean fermentation profile.

Taste. Initial flavors of toasted biscuit and cracker malt are quickly met by an earthy, savory mushroom presence that lingers into the aftertaste. Subtle ripe fruit esters provide complexity against a medium-high bitterness. Finishes dry and crisp with a minerally snap, balancing the subtle caramel sweetness and toasted malt depth.

Mouthfeel. Medium-light body. High carbonation provides a refreshing, crisp sensation. No alcohol warmth at 5% ABV. Smooth texture, not heavy, with a light flinty sharpness in the finish.
