Twenty Five - Variant is a masterful anniversary Imperial Stout that celebrates a quarter-century of barrel-aging expertise. This complex blend presents an alluring sensory profile led by a tantalizing chocolate cherry nose, derived from the integration of cocoa nibs and tart Door County cherries. On the palate, deep roasted malts provide a sturdy foundation for decadent layers of bittersweet chocolate and dark fruit, while extended maturation in bourbon barrels contributes smooth notes of toasted oak, vanilla, and caramel. The experience is exceptionally rich and viscous, concluding with a harmonious balance of roasted bitterness and a lingering, sophisticated bourbon warmth.
Appearance. Opaque, jet black in color (SRM 40+). Pours with a dense, dark brown head of moderate retention that leaves oily legs on the glass, indicative of high viscosity and alcohol.
Aroma. High intensity aroma featuring a complex interplay of dark chocolate, cocoa, and sweet-tart Door County cherries. Deep roasted malt notes of espresso and bittersweet chocolate are complemented by rich bourbon-barrel influences of vanilla, toffee, and charred oak. Esters are present as subtle dark fruits like raisins and plums.
Taste. The initial impression is decadently rich and malt-forward, showcasing layers of dark chocolate from cocoa nibs and the bright, slightly acidic tang of Door County cherries. The middle palate reveals bourbon-soaked oak, caramel, and vanilla. Bitterness is moderate to firm but well-balanced by a residual malty sweetness. The finish is long and warming with a lingering bittersweet cocoa and roasted grain aftertaste.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A significant, smooth alcohol warmth is present and well-integrated, consistent with its high strength.

A 25. évfordulós Bourbon hordóérlelt Stout cseresznyével és kakaóbabbal házasított változata. A cseresznye savassága, az alapsör földességével, édességével remekül harmonizál.

Az Imperial Stout alkoholosabb, szárazabb, csokisabb a sima stouthoz képest, rendkívül gazdag, édes, telt malátajelleggel. A keserűség származhat pörkölt malátákból vagy komló hozzáadásából. Eredetileg az Orosz cári családnak szánták.

A Stout a porter szárazabb, sötétebb, testesebb erősebb leszármazottja. Színben nagyon hasonlóak, a stoutokban azonban sokkal több a karamellizált pörkölt maláta és a kávés ízvilág, valamint édeskésebbek is. A stout szó első ismert használata egy 1677-ben keltezett, az Egerton Manuscripts-ban talált dokumentumban, amely a sör erősségére utal. 1721-ben használták először a porter nevet egy pörkölt malátával készült sötétbarna sör leírására. A porterek hatalmas népszerűsége miatt a sörfőzők többféle erősségben készítették őket. Az erősebb, jellemzően 7 vagy 8 %-os alkoholtartalmú söröket "stout porter"-nek nevezték, így a stout és a porter története és fejlődése összefonódott.
