This bold Double IPA is defined by a vibrant hop profile featuring Motueka and Mackinac varieties. The Motueka hops deliver a punch of tropical fruit accented by subtle spicy notes, while the Michigan-grown Mackinac adds layers of ripe papaya, cantaloupe melon, and bright citrus. Supported by a clean, neutral malt base, the house ale yeast allows the intense hop aromatics to take center stage. At 8.3% ABV, it carries a smooth, integrated alcohol warmth that balances the firm bitterness. The result is a complex yet drinkable ale with a dry, resinous finish that lingers on the palate.
Appearance. Deep gold to light copper (approx. 8–10 SRM). Displays a moderate-sized, persistent off-white head with good lacing. Clarity is clear to slightly hazy.
Aroma. High intensity hop aroma dominated by tropical papaya, cantaloupe melon, and bright citrus zest. Secondary notes of lime and a hint of cracked pepper spice from the New Zealand hops. Malt is low and neutral, presenting as a clean, grainy backdrop. Fermentation is clean with very subtle fruity esters.
Taste. Initial impression is an explosion of tropical fruit and melon. High hop flavor featuring papaya, lime, and citrus rind. Bitterness is moderately high and firm but lacks harshness. Malt flavor is low and unobtrusive, providing a soft bready support. The finish is dry to medium-dry with a lingering, resinous hop bitterness and a clean alcohol presence.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high. A noticeable but well-integrated alcohol warmth is present without being hot or solventy. No hop-derived astringency.
