This Experimental Mead presents a vibrant, tropical profile driven by a bold infusion of pineapple and coconut. Pouring a pale yellow, it opens with a high-intensity aroma of ripe, acidic pineapple softened by the creamy, lactonic notes of coconut. The underlying honey character provides a floral foundation that supports the fruit. On the palate, the initial impression is of lush pineapple, transitioning into a smooth, lingering coconut finish. At 10% ABV, there is a well-integrated alcoholic warmth that enhances the medium-full body. It balances honeyed sweetness with fruit acidity for a refreshing yet potent sensory experience reminiscent of its namesake cocktail.

Appearance. Pale yellow (SRM 2-3); clear to brilliant clarity; very low head formation and minimal foam persistence, typical of a still or lightly carbonated mead.

Aroma. High intensity tropical fruit; dominant notes of fresh, tart pineapple and sweet, creamy coconut; secondary floral honey nuances with a clean, neutral fermentation character; no hop or malt presence.

Taste. Initial burst of succulent pineapple flavor with moderate acidity; balanced by significant honey sweetness; smooth coconut creaminess emerges mid-palate and carries into the finish; clean fermentation with no phenolic or fusel notes; lingering tropical fruit aftertaste.

Mouthfeel. Medium-full body with a slight syrupy weight; low carbonation; noticeable but smooth alcohol warmth; creamy texture from the coconut addition; no astringency.
