This Raspberry Cuvée showcases a masterful blend of Pacific Northwest and Colorado raspberries refermented atop a foundation of well-aged Saison. The sensory profile is dominated by intense, fresh raspberry aromatics and a vibrant crimson hue. Beyond the fruit, the base beer reveals its complexity through aged barrel notes of soft oak and a rustic, grainy malt character. Effervescent and highly attenuated, it balances the natural tartness of the berries with a spicy, peppery yeast profile. The finish is remarkably dry, showcasing the interplay between bright fruit acids, delicate tannins, and the signature earthy funk of a well-matured Farmhouse ale.
Appearance. Deep crimson to ruby-red in color; a long-lasting, frothy, pink-tinted head with excellent lacing. Clarity is hazy due to the heavy fruit refermentation and unfiltered nature of the base beer.
Aroma. High intensity of fresh, jammy raspberries. Moderate spicy yeast notes of cracked black pepper complement a light, grainy malt backbone. Low earthy hop character is present, alongside a moderate wild funk and soft oak vanillins from the aged barrels.
Taste. Vibrant raspberry tartness leads the palate, supported by a low, soft grainy malt presence. Yeast-derived esters of black pepper provide a spicy counterpoint to the fruit. Hop flavor is low and herbal, while the bitterness is low, allowing fruit acidity to drive the balance. The barrel aging contributes a delicate tannic structure and woody complexity. The finish is very dry and crisp with a lingering tart berry aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that provides an effervescent, sparkling mouthfeel. Light alcohol warmth is present. Low tannic astringency from fruit skins and oak enhances the overall dryness.
