This expressive Saison showcases a vibrant, harvest-driven character centered on O’Henry peaches. The aroma is dominated by juicy stone fruit and floral esters, underpinned by a delicate, rustic funk from the house mixed-culture and neutral oak barrel aging. On the palate, a soft, grainy malt base provides a canvas for layers of sun-ripened peach, balanced by a subtle, woody tannin and a whisper of peppery spice. Despite the fruit intensity, the finish remains exceptionally dry and effervescent, staying true to the style’s farmhouse roots with a refreshing, lingering crispness and high attenuation that highlights the fruit's natural acidity.
Appearance. Deep gold with a luminous sunset-orange hue; hazy and unfiltered. Displays a long-lasting, dense, rocky white head that leaves significant Belgian lace on the glass.
Aroma. High intensity stone fruit, specifically ripe peach and nectarine. Complemented by moderate spicy phenols resembling black pepper and a light, earthy hop character. A subtle vanillin and toasted oak presence merges with a faint, leathery farmhouse funk.
Taste. An immediate impression of fresh O’Henry peaches followed by a soft, grainy malt palate. Low hop bitterness is balanced by a light, refreshing tartness. The finish is bone-dry and highly attenuated, leaving a lingering peppery spice and mild oak-derived tannins in the aftertaste.
Mouthfeel. Medium body with very high, effervescent carbonation. The 7% alcohol provides a light, well-integrated warmth. Crisp and refreshing without any astringency.

This peach variety is always one of the last peach varieties to be harvested in Palisade, Colorado. It has less acidity than other peaches in my opinion. This blend proves my hypothesis for sure. Medium acidity, intense peach, full bodied. This is a very small blend and is exactly up the alley for any #teamfruit member
