Sang Royal is a majestic Wild Specialty Beer that pours a deep garnet with a fugitive, rose-tinted head. The sensory journey begins with an intense bouquet of Pinot Noir grapes from the Willamette Valley, delivering layers of sun-ripened summer berries, dark cherry, and a whisper of peppery spice. Extended aging in oak barrels and foudres for nearly two years imparts sophisticated notes of toasted wood and vanillin, harmonizing with a sharp, vibrant lactic acidity. The palate is profoundly vinous, echoing fine red wine with its soft tannic structure and bone-dry finish. Expect a sophisticated interplay between funky wild fermentation and rich, dark fruit.
Appearance. Deep mahogany to ruby red (20-30 SRM). Head is thin and light tan with a distinct pinkish hue, showing moderate to low retention. Clarity is generally clear with a slight haze from fruit and wood tannins.
