Cascade Brewing's Pêche Fumé is a complex Wild Specialty Beer that beautifully balances vibrant stone fruit with rustic, savory undertones. Brewed as a sour wheat ale with smoked malt, it undergoes wild fermentation in open-top puncheon barrels alongside Northwest-grown peaches. The sensory journey highlights a fusion of bright, lactic peach acidity and delicate, campfire-like wisps of smoke. Underneath, neutral oak wood tannins and a soft wheat malt backbone structure the palate, leading to a bone-dry, tart, and highly sophisticated finish where sweet-natured fruit esters play against a lingering, whispering smoky finish.
Appearance. Deep golden to light amber in color with a slight, persistent haze. Pours with a thin, off-white head that dissipates rapidly due to high acidity, leaving a light collar and minimal lacing.
Aroma. High intensity of ripe, fresh peaches and sharp lactic sourness, closely followed by a complex, subtle background of clean wood smoke. Earthy wild yeast esters, light oak vanillin, and a crackery wheat malt character round out the bouquet. Hop aroma is absent.
Taste. An initial impression of intense, clean lactic acidity is immediately joined by rich, flesh-and-skin peach flavors. A delicate, savory smoke note from the smoked malt weaves through the mid-palate, dryly contrasting the fruit. Mild oak tannins add structure. Finishes bone-dry, highly acidic, and tart, with lingering peach skin and a whisper of smoke. Bitterness is extremely low.
Mouthfeel. Medium-light body, thinned slightly by the sour fermentation. Carbonation is moderate to high, creating an effervescent, crisp sensation. A very mild oak tannin astringency enhances the dry finish. Alcohol warmth is a gentle, well-integrated hint.
