Pêche 2023 is a sophisticated Wild Specialty Beer that showcases the mastery of the Northwest sour style. This blend of sour blonde, triple, and golden ales is aged for up to eighteen months in wine barrels and foudres, resulting in a complex, multi-layered profile. The sensory experience is defined by the vibrant refermentation of peaches, delivering succulent stone fruit notes that harmonize with a sharp, cleansing lactic acidity. The extended wood aging imparts a delicate oak structure and vinous depth, while the underlying golden base provides subtle honeyed malt accents. It finishes exceptionally dry with a lingering, elegant peach skin tartness.

Appearance. Pours a hazy, golden-amber to light orange (SRM 6–9) with a luminous peach-colored tint. The white head is fine-beaded but dissipates quickly into a thin collar, showing limited lacing due to high acidity.

Aroma. High intensity aromatics of fresh, sun-ripened peaches, nectarine, and apricot skin. A clean, sharp lactic tartness is complemented by white wine vinous notes, toasted oak, and a faint hint of vanilla from the foudres. Malt is low, offering a light cracker-like backdrop.

Taste. The initial impression is one of bright, assertive acidity followed by a rush of fleshy peach flavor. The malt character is minimal, providing just enough bread-crust structure to support the fruit. There is virtually no hop bitterness or flavor; the balance is driven entirely by the interplay of fruit tannins and sourness. The finish is remarkably dry, leaving a lingering impression of tart fruit and soft oak.

Mouthfeel. Medium-light body with a crisp, lively moderate-to-high carbonation. A light tannic astringency from the peach skins and wine barrels adds structure. Despite the 6.9% ABV, the alcohol warmth is subtle and well-integrated.
