A complex and vibrant Wild Specialty Beer, this collaboration captures the essence of the Pacific Northwest through a sophisticated blend of sour triple ales. It opens with an assertive lactic acidity that carries deep, jammy notes of Oregon marionberries and the floral, zesty brightness of California Meyer lemons. Sixteen months of maturation in oak wine barrels imparts a refined structure, weaving in dry tannins and subtle vinous undertones that balance the intense fruit profile. The high-gravity base provides a sturdy foundation, though the fermentation remains bone-dry, resulting in a provocative, multilayered sensory experience defined by sharp citrus and dark berry complexity.
Appearance. Deep ruby to garnet with purple highlights; a moderate, pink-tinted head forms but recedes quickly to a thin collar; slight haze is present from the heavy fruit addition.
Aroma. High intensity aromatics featuring sharp lactic sourness, earthy marionberries, and fragrant Meyer lemon zest. Moderate oak notes provide a vanilla and toasted wood backdrop, accompanied by a distinct vinous character and faint spicy phenols from the wild fermentation.
Taste. Initial impression is a bracing, clean lactic tartness. Dominant flavors of dark, seedy marionberries and tangy lemon curd are followed by dry oak tannins and a hint of white wine. Malt presence is low, providing just enough cracker-like support before finishing exceptionally dry and acidic with a lingering berry skin aftertaste. Hop bitterness is negligible.
