Cascade Brewing Mayan Bourbonic Plague (2019)

Porter 11.7 º
This complex Sour Porter elevates the classic English Porter base into a bold, barrel-aged masterpiece. The foundation of chocolate and toasty malt is redefined by assertive lactic acidity and extended maturation in bourbon and wine barrels, contributing layers of charred oak, vanilla, and dark vinous fruit. Infusions of cacao and cinnamon provide a rich, spiced-chocolate heart, while a late-breaking heat from cayenne pepper adds a vibrant, tingling counterpoint to the deep malt structure. At 11.7% ABV, the experience is intensely warming and structured, showcasing a masterful balance of tartness, spice, and barrel character through a long, acidic finish.
Appearance. Very dark brown to near-black (SRM 30+) with deep ruby highlights when held to the light. The head is thin, tan in color, with low retention and minimal lacing, typical for high-gravity acidic beers.
Aroma. High intensity with a complex blend of dark chocolate, toasted malt, and caramel. Strong barrel influence provides notes of vanilla, toasted oak, and vinous red wine. Spiced notes of cinnamon and earthy cacao are prominent, supported by dark fruit esters like plum and cherry, and a sharp lactic tartness.
Taste. Initial impression is a sharp, clean acidity followed by layers of chocolate and toasted bread malt flavors. The mid-palate reveals rich cacao and warm cinnamon, reminiscent of Mexican chocolate, while the bourbon barrels add vanilla and oak tannins. Hop flavor is absent, and bitterness is low, primarily derived from roasted grain and cacao. A distinct cayenne pepper heat emerges in the finish, which is long, dry, and acidic.
Mouthfeel. Medium-full body with a lightly creamy texture despite the thinning effect of high acidity. Carbonation is low to moderate. Significant alcohol warmth is present but well-integrated, accompanied by a moderate tannic astringency from the wood and cacao.
