Framblanc is a sophisticated Wild Specialty Beer that showcases the delicate, floral essence of white raspberries against a complex blend of sour blond and triple ales. Aged for up to a year in oak wine barrels, it presents a layered sensory profile defined by grapefruit zest, tart white cranberries, and succulent peaches. The experience is driven by a vibrant, lactic acidity that brightens the fruit character, while the oak aging provides structural depth with subtle vinous notes and wood tannins. This project highlights a refined balance between wild fermentation and bright, locally sourced fruit, finishing bone-dry with a lingering, elegant berry essence.
Appearance. Deep gold to pale amber with a faint, opalescent peach-white hue; clarity ranges from clear to a slight haze. A white, fine-beaded head forms but dissipates quickly due to the high acidity and alcohol, leaving minimal lacing.
Aroma. High aromatic intensity featuring a sharp, clean lactic sourness. Prominent notes of floral white raspberry and tangy white cranberry are complemented by the citrusy punch of grapefruit zest and softer peach esters. Subtle oak-derived vanilla and white wine vinous notes merge with a faint, cracker-like malt backbone.
Taste. Leading with a bold, puckering acidity, the palate immediately reveals layers of white raspberry and zesty grapefruit. Mid-palate flavors of under-ripe peach and tart cranberry provide complexity. Hop bitterness is negligible, allowing the fruit acidity and fermentation character to drive the balance.
