Figaro is a sophisticated Wild Specialty Beer that exemplifies the Northwest sour style through a intricate marriage of fruit and oak. The sensory experience begins with a high-intensity aroma of sharp lactic tartness, earthy white figs, and zesty lemon peel, harmonized with the vinous, buttery notes of Chardonnay barrels. On the palate, a bracing acidity highlights flavors of green grapes and tart apple skins, while the dried fig provides a concentrated fruit depth. Despite its significant strength, the beer maintains a lean, dry profile, finishing with lingering oak tannins and a sophisticated, well-integrated alcohol warmth.
Appearance. Pours a deep golden to burnished copper hue. The head is ivory-colored, initially forming a thin layer but receding quickly due to the high acidity and alcohol content, leaving minimal lacing. Clarity is generally clear with a slight haze from the fruit and barrel tannins.
Aroma. High intensity. A complex bouquet of sharp lactic sourness and funky wild yeast character.
