Cascade Brewing’s Curious Carousel is a complex Wild Specialty Beer, masterfully blending sour red, blonde, triple, quad, and wheat ales aged up to 18 months in oak foudres, whiskey, and wine barrels. This vibrant copper-ruby ale offers a layered sensory journey, beginning with a punchy lactic acidity and deep cherry and grape refermentation character. Floral infusions of rose petals, hibiscus, and lavender weave through a bouquet of fresh orange zest and fragrant vanilla bean. The whiskey and wine barrel influence provides a structured tannic backbone and subtle oak sweetness, balancing the sharp, funky wild fermentation for a deeply nuanced, lingering finish.
Appearance. Deep copper to ruby-magenta hue with a slight haze (15-22 SRM); pours with a thin, pink-tinted head that shows poor to moderate retention, eventually fading to a fine collar with minimal lacing.
Aroma. High intensity and deeply complex; sharp lactic tartness and funky, earthy Brettanomyces notes are layered with bright cherry, vinous grape, and zesty orange. Floral scents of rose and lavender are prominent, grounded by a subtle vanilla sweetness and a whisper of whiskey-soaked oak and coconut.
Taste. Initial sharp, puckering sourness leads into rich flavors of tart cherries and dark grape skins. A complex malt base from the blend of quad and triple ales provides a subtle dried fruit and caramel depth, while hibiscus and lavender add a botanical dryness. The finish is very dry and highly acidic, with lingering notes of vanilla bean and citrus zest and a distinct woody structure.
Mouthfeel. Medium body with a crisp, moderate carbonation that prickles the palate. A notable tannic astringency from the oak and grape skins adds structure, while a faint alcohol warmth is present, well-integrated into the acidic profile.
