Chêne Des Fous is a complex and deeply structured Wild Specialty Beer that showcases a masterful collaboration between Cascade and Burial. This sour triple ale, aged for eighteen months in French oak barrels, presents a bold sensory profile defined by the addition of fresh apricots, dried sumac, and toasted American oak chains. The aroma is a sophisticated blend of bright stone fruit and savory lemon, underscored by an intense woody character. On the palate, the sharp lactic acidity is balanced by earthy tannins and the unique, peppery tartness of sumac, resulting in a bone-dry, multi-layered experience with a lingering, acidic finish.
Appearance. Deep gold to burnished orange with a slight haze and a copper hue. Pours with a thin, off-white head that has low retention and minimal lacing, typical of extended barrel-aged sours.
Aroma. High intensity with prominent notes of fresh apricot and tangy, lemony sumac. Significant oak character provides layers of vanilla, toasted wood, and spice. Wild fermentation notes include earthy funk, leather, and a sharp lactic zip with negligible hop presence.
Taste. Sharp, clean lactic sourness leads into flavors of tart apricot and a distinct savory citrus quality from the sumac. The malt is minimal, providing just enough structure to support the intense toasted American oak and French oak tannins. Bitterness is very low, and the finish is bone-dry and acidic with a complex, lingering wood-derived aftertaste.
Mouthfeel. Medium-light body with high carbonation that produces a prickly, effervescent sensation. A noticeable alcohol warmth reflects its strength, while oak tannins and sumac contribute a moderate, drying astringency.
