This Wild Specialty Beer showcases the signature Northwest sour profile, blending mature blond ales aged in oak wine barrels. The sensory experience is defined by the vibrant, concentrated essence of Northwest-grown apricots, which offer a lush stone-fruit aroma and flavor. This fruit character is balanced by a sharp, puckering lactic acidity and complex notes of earthy funk. The oak aging contributes subtle tannins and a hint of vanilla, rounding out the bright fruit notes. Highly effervescent and notably dry, the beer concludes with a clean, lingering apricot skin finish and a sophisticated vinous character from its long maturation in wood.
Appearance. Pours a deep golden to glowing orange hue (7-10 SRM) with a slight haze from the fruit addition. The white head is moderately sized upon pouring but dissipates relatively quickly to a thin collar, common for high-acidity beers.
Aroma. High intensity aromatics of fresh and sun-dried apricots dominate. These are supported by a sharp lactic sourness and a complex wild fermentation character including light earthy funk, leather, and a vinous, oaky depth. No hop aroma is present.
Taste. The palate is led by an intense, jammy apricot flavor followed immediately by a firm, bright lactic acidity. The malt presence is low and cracker-like, serving only as a base for the fruit. Oak tannins and a dry wood character provide structure, while the finish is bone-dry and puckering with a long, fruit-forward aftertaste. Bitter hop presence is absent (near 0 IBU).
Mouthfeel. Medium-light body with high, effervescent carbonation that provides a prickly sensation on the tongue. A light alcoholic warmth is present at 7.1%, and a mild tannin-driven astringency from the oak and fruit skins enhances the dry sensation.
