This vintage Northwest sour ale presents an intense sensory exploration of the apricot. A foundation of oak-aged blond ales provides a complex, vinous backdrop for a massive addition of fresh Pacific Northwest apricots. The initial impression is one of bright, sun-ripened fruit and skin-driven tannins, evolving into deeper notes of apricot preserves and dried fruit. The time spent in oak wine barrels for up to fourteen months contributes a subtle vanilla and wood structure that tames the sharp, lactic acidity. It is an assertive Wild Specialty Beer that balances aggressive tartness with a rich, multifaceted stone fruit character and a bone-dry, effervescent finish.
Appearance. Pours a luminous deep gold to burnt orange, reminiscent of apricot nectar. A thin, white head forms but dissipates quickly due to high acidity and barrel aging, leaving a faint ring of lacing. Displays a slight to moderate haze from the significant fruit volume.
Aroma. High intensity aromatics of fresh and jammy apricots dominate the foreground. Beneath the fruit lies a complex web of lactic tartness, subtle Brettanomyces funk (damp hay, earthy), and a distinct vinous quality from the oak wine barrels. Very low malt presence and no hop aroma.
Taste. Leading with a sharp, puckering lactic acidity that immediately highlights the apricot flavor. The fruit manifests as both tart fresh skin and sweet, concentrated preserves. Mid-palette reveals oak tannins and a hint of white wine character. The finish is very dry and acidic, with a lingering, floral apricot aftertaste and minimal hop bitterness.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perceived acidity. A light astringency from the oak and fruit skins adds structure. Despite the dryness, there is a certain juicy weight from the fruit esters, accompanied by a mild alcohol warmth.
