This Northwest sour ale presents a masterful marriage of stone fruit and oak. A blend of Blond ales aged in wine barrels provides a sophisticated, vinous backbone that supports the intense expression of fresh and dried apricots. The sensory experience is defined by a bright, puckering acidity that heightens the succulent fruit character, evolving from juicy, sun-ripened apricots to deep, concentrated apricot preserves. Subtle wood tannins and a whisper of vanilla from the oak aging add structural complexity, while the wild fermentation delivers a clean, sharp tartness that lingers elegantly on the palate, perfectly showcasing the character of a Wild Specialty Beer.
Appearance. Luminous deep gold to orange-amber (SRM 7–9). The pour produces a thin, white head with minimal retention and light lacing, typical of highly acidic wild ales. Appearance is characterized by a persistent hazy glow from the extensive fruit contact.
Aroma. High intensity. Dominant aromas of ripe, fuzzy apricot skins and concentrated dried apricots are balanced by a sharp, lactic sourness. Background notes of white wine, toasted oak, and a subtle damp wood funk provide depth. The malt remains a quiet, crackery presence, allowing the fruit and vinous barrel character to lead.
Taste. A vivid burst of tart, fresh apricot and tangy apricot preserves leads the palate. The Blond ale base offers a subtle honeyed malt sweetness that is quickly overtaken by a firm, puckering lactic acidity. Oak aging contributes a dry, tannic structure and a hint of vanilla-like woodiness. The finish is remarkably dry and mouth-watering, with a long, lingering essence of apricot pit and stone fruit skin.
Mouthfeel. Medium-light body with a sharp, crisp mouthfeel. Carbonation is moderate, providing a refreshing lift against the heavy acidity. A light tannic astringency from the oak and apricot skins adds grip, accompanied by a faint, well-integrated alcoholic warmth.
