Carbon Brews’ Sweet, Tart, Sour, Heart is a festive Straight Sour Beer inspired by holiday caramel apples. It presents a vibrant interplay between sharp lactic acidity and a rich, biscuit-driven malt backbone featuring notes of caramel. The sensory experience is defined by the addition of Taiwanese apples and stone fruits, which are aromatically lifted by a warming spice blend of cinnamon, nutmeg, and allspice. At 6% ABV, the beer maintains a refreshing tartness while offering a rounded, dessert-like complexity. Clean fermentation and a lack of hop bitterness allow the intricate balance of spice and fruit to remain the focal point.
Appearance. Pale gold to light amber (SRM 4–7); clear to slightly hazy. Large, dense, white head with fair retention and light lacing; effervescent carbonation.
Aroma. High intensity; dominant sharp lactic sourness and tart Taiwanese apples. Pronounced festive spices including cinnamon, nutmeg, and allspice are layered over biscuity malt and stone fruit esters of peach and apricot. No hop aroma; clean fermentation character.
Taste. Leading clean lactic sourness followed immediately by bready, biscuit, and caramel malt flavors. Prominent tart apple and stone fruit characteristics are balanced by warm festive spices. Hop bitterness is undetectable. The finish is off-dry and lingering with a pleasant spiced-apple aftertaste.
Mouthfeel. Medium body with a rounded, creamy, dessert-like feel that exceeds the typical lightness of the style. Moderate to high carbonation. Subtle, well-integrated alcohol warmth; crisp, refreshing acidity.
