Brewed To Bee Wild is an elegant Wild Ale born from a collaboration with Raw Honey HK, utilizing a unique wild culture harvested directly from beehives. This light orange ale offers a complex sensory profile where prominent tropical notes of guava and longan meet delicate floral and zesty accents. French oak barrel aging imparts a refined woody structure, grounding the vibrant barnyard funkiness characteristic of the wild ferment. On the palate, a mouth-watering sourness balances a gentle bitterness derived from the raw honey, creating a sophisticated tension. The medium-low body and soft carbonation lead to a graceful, dry finish that highlights the interplay between wild yeast and honey terroir.
Appearance. Light orange (SRM 7-9) with a slight haze. Pours with a moderate white head that shows fair retention and light lacing.
Aroma. High intensity with a complex bouquet of tropical fruit including guava and longan. Prominent zesty citrus and delicate floral honey notes are layered over a distinct barnyard funk and earthy wet hay. Subtile refined French oak provides a faint vanilla and toasted wood backdrop.
Taste. The initial impression is vibrantly fruity and tart. Tropical guava and longan flavors dominate the mid-palate, supported by a mouth-watering sourness. Low bready malt character is quickly overtaken by barnyard funk and a gentle, non-hop bitterness from the honey. The French oak adds complexity without being overly tannic. The finish is dry, clean, and graceful with lingering zesty and earthy notes.
Mouthfeel. Medium-low body with a soft carbonation that enhances the elegant finish. A light alcohol warmth is present but well-integrated. Low astringency with a crisp, highly attenuated mouthfeel.
