This sophisticated Saison showcases a vibrant collaboration between beer and cider techniques. Poured from French oak ex-port barrels after eighteen months of aging, it radiates a deep amber hue. The aroma is a complex tapestry of mandarin marmalade, dried apricot, and wildflower honey, underscored by the rustic, leathery funk of Brettanomyces. The use of champagne yeast alongside a traditional base ensures a highly attenuated, bone-dry finish. On the palate, the bright citrus zest of mandarin harmonizes with a delicate acidity and vinous port notes, while the oak provides a structural tannin that lingers flirtatiously alongside a spicy fermentation character.
Appearance. Deep amber (12–14 SRM) with a slight haze. Topped by a dense, long-lasting ivory head that leaves persistent Belgian lacing.
Aroma. High intensity. Dominated by citrus esters of mandarin and orange marmalade, followed by stone fruit notes of apricot and a touch of honey. A distinct earthy, leathery funk from Brettanomyces emerges, layered over vinous port notes and subtle French oak vanillin.
Taste. Initial citrus brightness gives way to complex layers of mandarin zest and stone fruit. A firm but balanced acidity provides structure. The mid-palate reveals dry honey and spicy black pepper phenolics, transitioning into a very dry, wood-inflected finish. Bitterness is moderate, providing a clean counterpoint to the vinous port-barrel depth.
