Trebbionette 2022 is a vibrant Straight Sour Beer that captures the rustic elegance of a spontaneous harvest. The sensory profile is led by a sharp, clean lactic acidity and the distinct vinous, floral lift of Trebbiano Grapes. A subtle, earthy depth from Chestnut Honey weaves through the aroma, providing a herbal counterpoint to the bright, lemony tartness. On the palate, a crisp, crackery malt base supports esters of white peach and green apple. The spontaneous cofermentation delivers a complex, wild character that remains remarkably clean, finishing bone-dry and effervescent with a lingering, sophisticated grape-skin nuance and refined acidity.

Appearance. Pale straw to light gold (3 SRM). Exhibits a slight haze typical of spontaneous fermentation. Pours with a large, frothy white head that shows poor retention due to high acidity, leaving minimal lacing.

Aroma. High intensity sourness with a sharp, lemony lactic character. Notable vinous esters of white grape and apricot are complemented by a subtle, spicy, and earthy floral note from the Chestnut Honey. Malt is low, presenting as light crackers or sourdough bread. No hop aroma.

Taste. Initial impression is a brisk, clean lactic sourness that dominates the palate. Subtle grainy and crackery malt flavors provide a brief foundation before being overtaken by tart citrus and green apple notes. The Trebbiano Grapes add a dry, white-wine complexity. Bitterness is undetectable, and the finish is bone-dry and crisp with a refreshing, acidic snap. No hop flavor is present.
