This spontaneous grains-and-grapes hybrid marries a rustic base of organic barley and wheat with the bold personality of Sangiovese biodynamic grapes from the Chianti Classico region. The foot-stomped grapes drive a vibrant sensory profile, offering deep aromas of sun-ripened red cherry, earthy funk, and a hint of wild spice. On the palate, the beer is remarkably dry and vinous, displaying the complex, wild character of the microorganisms naturally inhabiting the grape skins. Notes of plum and leather meld with a delicate tannic structure, finishing with a crisp, effervescent, and lingering rustic charm typical of a sophisticated Brett Beer.
Appearance. Pours a hazy, deep copper to burnished rose hue with a dense, off-white to light pinkish head that shows moderate retention and fine lacing.
