Cantina Errante Nonpedro 2020

Nonpedro 2020 is a complex Wild Specialty Beer defined by its spontaneous cofermentation of ancient Tuscan fruit and grains. The sensory journey begins with intense aromas of Decana del Comizio pears and Renetta Grigia and Deliziosa apples, layered over a rustic base of organic barley malt and evolutive wheat populations. The 10% ABV provides a structural backbone, while four months of barrel aging contributes subtle wood tannins. Expect a funky, barnyard character from the fruit’s natural microflora, complemented by the earthy nuances of surannée hops. This bone-dry, acidic ale balances sharp orchard fruit tartness with a sophisticated, lingering finish of aged grain and wild complexity.
Appearance. Deep golden to amber hue (SRM 8-12) with a significant hazy to opaque clarity. The white head is moderately small with poor retention, typical of high-acid, high-alcohol wild fermentations, leaving minimal lacing.
Aroma. High intensity aromatics featuring a complex blend of funky barnyard, damp hay, and leather from spontaneous fermentation. Prominent orchard fruit notes of bruised apple and ripe pear skins are intertwined with a rustic, bready grain character from the evolutive wheat. Subtle earthy notes from the aged surannée hops are present in the background.
Taste. The initial impression is sharply acidic and bone dry. Vibrant flavors of tart Renetta Grigia apples and floral Decana del Comizio pears dominate the mid-palate, supported by a sturdy but clean organic barley malt backbone. Bitterness is very low, as the surannée hops provide texture rather than bitterness. The finish is long, acidic, and complex with lingering wild funk and a touch of woody tannin.
Mouthfeel. Medium body with a lively, high carbonation that creates a prickly sensation on the tongue. A noticeable but well-integrated alcohol warmth is present due to the 10% ABV. There is a slight, pleasant astringency from the fruit skins and barrel contact.

Passa 4 mesi in barrique e tonneaux a fermentare solo coi lieviti presenti sulle bucce di frutta, poi ulteriori dieci mesi di maturazione in bottiglia. Chiara, al naso note acide e di frutta bianca, in bocca è fruttata, acidula e, nonostante la gradazione, la bevuta risulta comunque facile e fresca.
