This spontaneous Brett Beer, crafted through a perpetual solera method, radiates with the vibrant energy of fresh Tuscan citrus. The 2021 vintage showcases a complex interplay between wild microflora and a bright medley of orange, lemon, grapefruit, and citron zests. Local organic wheats and barley malt provide a rustic foundation, while aged hops offer a subtle, earthy depth without intrusive bitterness. Expect a sensory profile defined by high attenuation and a bone-dry finish, where the citrus oils dance alongside developing notes of wet hay, barnyard funk, and light stone fruit. It is a masterful, refreshing expression of time and terroir.
Appearance. Deep gold to amber (6–9 SRM). Hazy to slightly opaque due to the use of organic wheats and spontaneous fermentation. Persistent white head with fine bubbles and moderate lacing.
Aroma. High intensity. Dominant fresh citrus zest (lemon peel, grapefruit pith, orange oil). Complex fermentation character includes rustic funk, damp hay, and a hint of earthy aged hops. Subtle bready wheat and crackery malt notes emerge as it warms.
Taste. Initial sharp citrus oil and pithy bitterness. Very dry and crisp on the palate. Malt flavors of raw wheat and honeyed barley are secondary to assertive funky yeast notes of leather and fruit skin. Low bitterness from aged hops. Clean, slightly acidic, and highly attenuated finish.
Mouthfeel. Medium-light body with a crisp, effervescent texture. High carbonation level. Light alcohol warmth that is well-integrated. No astringency despite the use of citrus zests.
