Unlike its siblings, it is brewed entirely with pale malt (no wheat) and features a hopping regime of 50% fresh hops and 50% aged hops. After two years in the barrel, it undergoes a second "cold hopping" with fresh hops before bottling. The result is an amber-coloured beer that retains the typical sour, vinous flavour of spontaneous fermentation but adds a distinct bitterness and complex, slightly caramelized character.
