This special edition American Amber Ale, inspired by traditional Chicha de Jora, presents a unique Peruvian profile. The beer pours a deep copper, but the sensory experience is immediately defined by intense, festive aromas of clove and cinnamon. On the palate, the addition of Maíz de Jora provides a rustic, earthy grain base, while miel de chancaca contributes a delicate, dark sugar sweetness that complements the caramel malt core. Despite its moderate strength, it is exceptionally easy to drink with a light body and low bitterness, allowing the heritage spices and honeyed malt character to linger through a clean, aromatic finish.
Appearance. Deep amber to coppery-brown in color (approximately 15 SRM). It features a moderately large, off-white head with good retention and light lacing. The beer is semi-filtered, maintaining a mostly clear appearance with a very faint, rustic haze.
Aroma. High intensity spice character dominates, featuring pungent clove and warm, woody cinnamon. Beneath the spice is a moderate maltiness with notes of caramel and light honey. Hop aroma is very low to absent, and fermentation esters are clean and neutral.
Taste. Initial impression is of spicy sweetness and caramel malt. Prominent flavors of clove and cinnamon are well-integrated with the light, honey-like sweetness of miel de chancaca. The Maíz de jora adds a subtle, earthy depth to the moderate toasted malt profile. Hop bitterness is low, creating a balance that favors the specialty spices and malt. The finish is clean with a lingering aftertaste of sweet spice.
Mouthfeel. Medium-light body, which is notably lighter than typical for the style. Carbonation is moderate, providing a fresh sensation. Alcohol warmth is very subtle and well-integrated. Overall smooth texture with no perceptible astringency.
