This vintage German Pils, aged in oak barrels with Brettanomyces, reimagines the traditional Leith Pils with complex layers of wild character. The nose is a vibrant interplay of herbal hops and bright citrus, underscored by a rustic, earthy funk. On the palate, the expected grainy-sweet, cracker-like malt foundation is swiftly overtaken by a firm bitterness and zesty lemon notes. Extended maturation provides a bone-dry, crisp finish with subtle woody tannins and a lingering herbal snap. It is a sophisticated, highly attenuated lager that balances old-world precision with wild, funky complexity.
Appearance. Deep straw to light gold (3-4 SRM). Generally clear to brilliant, though a very faint haze may persist from the Brettanomyces. Features a dense, creamy, long-lasting white head with excellent lacing.
Aroma. High intensity. Forward herbal and spicy hop character blended with bright, zesty citrus esters. A distinct Brettanomyces presence offers notes of wet hay, earth, and a subtle leathery quality, backed by a low grainy-sweet malt scent and a hint of neutral oak.
Taste. Initial impression is a sharp, clean malt cracker flavor quickly superseded by assertive herbal hop bitterness and citrus zest. The Brettanomyces adds a secondary layer of earthy complexity and slight fruitiness. Exceptionally dry and crisp through the finish, with a lingering, firm bitterness and a touch of drying wood tannin.
Mouthfeel. Medium-light body with high carbonation that enhances the crisp, refreshing character. The mouthfeel is lean and highly attenuated, showing a slight mineral sharpness and very light, well-integrated alcohol warmth.
