Cerveza Caleya

Caleya Top Secret is a classic American IPA that masterfully balances a complex five-hop blend with a crisp, dry profile. The sensory experience is dominated by assertive notes of resinous pine and sharp citrus zest, characteristic of the West Coast style. On the palate, a firm, clean bitterness takes center stage, supported by a lean malt foundation that provides structure without cloying sweetness. This beer finishes remarkably dry, leaving a lingering trail of grapefruit peel and floral hop oils. Its transparent appearance and vibrant carbonation enhance the refreshing, hop-forward intensity, making it a quintessential example of traditional West Coast craftsmanship.

Appearance. Ranging from medium gold to deep amber (approx. 7–10 SRM); brilliant clarity with a medium-sized, off-white head that demonstrates excellent persistence and lacing.

Aroma. High intensity hop aroma featuring prominent notes of pine resin, grapefruit, and subtle tropical fruit esters from the five-hop blend. Low, clean, grainy maltiness provides a neutral backdrop, accompanied by a very clean fermentation profile.

Taste. The flavor is dominated by an assertive hop character of citrus peel and resinous pine. Low to medium-low grainy malt provides a subtle toasted support. Bitterness is medium-high to high, leading into a very dry, crisp finish. The aftertaste is long and hop-forward, with no harshness.

Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, providing a lively mouthfeel. Very subtle, well-integrated alcohol warmth is present without being hot.
