Caleya Billie’s Delicatessen is a profound Imperial Stout that has undergone two years of transformation within bourbon barrels. The resulting profile is intensely aromatic, featuring a rich tapestry of espresso, dark chocolate, and charred oak, softened by the creamy sweetness of lactose. The extended maturation introduces sophisticated layers of vanilla, caramel, and a hint of toasted coconut. On the palate, a thick, velvety texture carries flavors of molasses and dried figs, leading into a long, warming finish where the high alcohol is masterfully integrated against a background of roasted bitterness. Reference to its milk stout origin provides a smooth, decadent counterpoint to the intense barrel character.

Appearance. Jet black and opaque (40 SRM). It pours with a dense, dark tan head of moderate retention that leaves oily, viscous legs on the glass.

Aroma. High intensity and complex, showcasing a blend of bittersweet chocolate, roasted coffee, and charred grain. Strong bourbon-derived notes of vanilla, oak, and caramel are prominent, complemented by moderate dark fruit esters resembling raisins and plums and a distinct sweet lactose creaminess.

Taste. Initially sweet and intensely rich with flavors of dark chocolate and molasses. The lactose provides a sustained creamy character that balances the medium-high bitterness and roasted grain flavors.
