This Alternative Grain Beer presents a rustic and aromatic profile, driven by the inclusion of organic rye and fresh juniper. The sensory experience begins with a distinctively spicy, peppery rye character that interweaves with the resinous, gin-like essence of juniper berries. Local malts provide a foundation of bready, grainy sweetness, while local hops contribute earthy and herbal highlights. The rye's influence is felt in a slightly viscous, silken texture that balances the crisp, piney bitterness. It concludes with a clean, dry finish where the botanical notes of juniper and the lingering spice of the grain harmonize against a sturdy malt backdrop.
Appearance. Deep amber to light copper (10-14 SRM). Thick, off-white head with good retention and light lacing. Slight haze is present, typical of organic rye and higher protein content.
Aroma. Moderate to high intensity. Strong grainy-sweet malt presence with a signature spicy, black pepper-like rye aroma. The juniper provides a prominent herbal, piney, and evergreen scent. Hop character is moderate and earthy, with no dominant fruit esters, maintaining a clean fermentation profile.
Taste. Initial bready malt sweetness quickly gives way to a complex interaction of spicy rye and resinous juniper. The juniper imparts a gin-like botanical flavor. Hop bitterness is moderate, providing a firm counterbalance to the grain. The finish is dry and crisp with a lingering spicy-herbal aftertaste.
Mouthfeel. Medium body with a noticeable oiliness or creaminess attributed to the rye grains. Carbonation is moderate. A very light, well-integrated alcohol warmth is present. Smooth and lacks any harsh grain astringency.
