Ca' del Brado Sip Sip is a complex Brett Beer that balances sessionable lightness with profound cellar depth. Long-aged and fermented with the house BUNNY yeast, it offers an intricate tapestry of rustic funk and delicate acidity. The addition of local unmalted wheat provides a soft, grainy foundation for the vibrant dry-hop profile of Amarillo and Simcoe. Expect a sensory journey of bright grapefruit, pine, and stone fruit, interwoven with earthy notes of hay and wild meadow. It finishes exceptionally dry and crisp, exemplifying a refined mixed-fermentation approach that remains highly refreshing while offering sophisticated layers of wild yeast character.
Appearance. Pale straw to light gold (2–4 SRM). Persistent white head with fine bubbles and light lacing. Slight to moderate haze is present due to the high proportion of unmalted wheat.
Aroma. High intensity with punchy citrus and tropical notes of grapefruit and apricot from Amarillo and Simcoe hops. A distinctive fermentation character features wet hay, earthy funk, and a hint of floral spice from the BUNNY yeast, backed by light, bready wheat.
Taste. Initial tart impression followed by a bone-dry malt profile. Hop flavors of orange zest, pine, and tropical fruit are prominent. The fermentation character is complex, showing rustic barnyard notes and a clean, puckering acidity. Bitterness is low, serving only to provide structure. The finish is very short, clean, and bracingly dry.
Mouthfeel. Light body with a refreshing, spritzy character. High carbonation enhances the crispness. No alcohol warmth is perceived. Very low astringency despite the long cellar aging and dry-hopping.

Mixed-fermentation session sour beer slowly matured in Ca' del Brado's cellar and dry-hopped with Amarillo and Simcoe.

It carries out a primary fermentation with their native BUNNY yeast (Bologna Unknown Native Naughty Yeast) and then continues with a period of fermentation/contamination in an open tank in the cellar, where it then rests for refinement and maturation.

Among the selected cereals, in addition to pale and pils malts, the brewers used unmalted wheat from the "Grani Alti" area (ancient grains of the Tuscan-Emilian Apennines), in particular of the Ardito variety.

This is a new Ca' del Brado project, with can packaging, of wild beers with mixed fermentation in open tanks, matured slowly and naturally in the cellar, with the complicity of the fermentative flora present in the environment.

The Wildest Can aims to bring traditional philosophy into the glass of Ca' del Brado - local ingredients, natural acidification with different aromatic/taste facets and specific tone of the cellar - but with a modern and innovative approach: beers from "gentle" acidity, packaged in cans, extremely drinkable and low in alcohol ("session beers"), also characterized by botanicals or spiciness that wink at the world of mixology!
